BBQ Chicken Meatball Bowls

Ingredients

    ground chicken
  • 3/4 cup
    finely chopped onion
  • 3 large
    garlic cloves, chopped
  • 2 Tbsp.
    olive oil
  • 1/2 cup
    bread crumbs
  • 1 large
    egg
  • 1 tsp.
    oregano
  • 1 tsp.
    sea salt
  • 1 tsp.
    pepper
  • handful
    fresh dill, chopped
  • bbq sauce
  • 1 Tbsp.
    olive oil
  • 1/2 cup
    sweet onion, chopped
  • 4 cloves
    garlic, chopped
  • 3 Tbsp.
    tomato paste
  • 2 Tbsp.
    soy sauce or coconut aminos
  • 2 Tbsp.
    apple cider vinegar
  • 2 Tbsp.
    Worcestershire
  • 1 Tbsp.
    dijon mustard
  • 1 Tbsp.
    BeeMaid Honey
  • 1 tsp.
    paprika
  • 1/4 tsp.
    liquid smoke
  • bowl toppings
  • 2 cups
    cooked white rice
  • 2 fresh
    avocados, diced
  • 2 cups
    steamed broccoli
  • 1 large
    cucumber, diced
  • 1/2 cup
    green onions

Directions

  1. Prepare the BBQ sauce by adding the ingredients to a medium-sized saucepan and simmer for 30 minutes, stir often to avoid burning. 
  2. Preheat oven to 400F and line a baking sheet with parchment paper, set aside.
  3. To a large mixing bowl, using a spatula, combine the ingredients for the Chicken Balls. Roll into 2 tbsp. portions and place onto the baking sheet.
  4. Bake for 20 minutes or until cooked through. They are cooked through when the liquids run clear.
  5. Once cooked, transfer the balls into the BBQ sauce and let them sit in the sauce while assembling the bowls.
  6. Place rice into serving bowls, add fresh greens, then add chicken balls and sauce.
