Honey Lemon Bars


For the Crust:

  • 1/2 cup 
    BeeMaid Honey
  • 1 cup 
    Coconut Oil, melted and cooled
  • dash 
    Sea Salt
  • 2 cups 
    All-purpose Flour

For the Filling:

  • Eggs
  • 3 Tbsp. 
    Lemon Zest
  • 1/2 cup 
    Lemon Juice
  • 1/3 cup 
    BeeMaid Honey
  • dash 
    Sea Salt
  • 2 Tbsp. 
    Almond or Coconut Flour


1.Preheat oven to 350F. Line a 9X9 baking dish with parchment paper and lightly grease with cooking spray. 
2.In a medium bowl, mix together the crust ingredients.  It will come together like a shortbread mixture.  Wet but holds together. 
3.Evenly distribute the crust to the baking dish and flatten until smooth.  Bake for 20 minutes. 
4.While the crust cooks, prepare the filling by adding all the ingredients to a medium-sized mixing bowl, combining aggressively with a whisk or use a hand mixer. 
5.Transfer the filling to the baked crust and bake for 30 minutes or until the filling is golden brown.
6.Let the bars cool completely then set for 1-2 hours in the refrigerator before serving.
7.You can serve with fresh lemon on top, if you like.
