Our Honey Coconut Key Lime Bars are a baked summer treat that combines a zesty key lime base with a creamy coconut topping for the perfect balance of tangy and sweet. Naturally sweetened with BeeMaid Honey, these bars burst with bright citrus and tropical coconut flavours. Ideal for picnics, backyard BBQs, or a sunny afternoon dessert, they’re a refreshing and indulgent baked bar that brings a taste of summer to any table.

Ingredients

Lime Filling
1/2 Cup
BeeMaid Honey
1/2 Cup
Lime Juice
4 Tsp
Coconut Flour
4
Large Eggs
Crust
3 1/2 Tbsp
BeeMaid Honey
2 1/2 Tbsp
Coconut Oil
1 1/2 Cups
Almond Flour
1/4 Cup
Unsweetened Coconut (shredded)
1 Tsp
Vanilla Extract
Pinch
Salt
Topping
1/4 Cup
Vanilla Greek Yogurt or Whipped Topping
1 Tsp
Fresh Lime Zest
1 Tbsp
Toasted Coconut
Optional:
Sliced Limes (garnish)

Directions

1. Preheat oven to 350F.

2. In a large bowl, combine the crust ingredients together and mix until thick. Transfer the dough mixture into a 8×8 inch pan lined with parchment paper and use a spatula to spread. Press the crust into the bottom and edches of the pan to ensure an even layer throughout the pan.

3. Bake in the oven for 8 minutes.

4. While the crust is baking, add the whisked eggs into a seperate bowl and then add in the rest of the filling ingredients. Continue to whisk together until the coconut flour has fully desolved and the honey is evenly dispersed throughout.

5. Remove the crust from the oven and set aside for 5-10 minutes. Then pour the filling contents on top of the crust layer. Shift the pan slightly to ensure the mixture is even on top. Then place back into teh oven for approximatley 15-20 minutes (depending on the heat of your oven).

6. Once filling has firmed up. Remove from the oven and let cool for 10 minutes. Once ready, transfer into the fridge and let the key lime bar chill for approximatley 2 hours.

7. When ready to serve, cut the bar into equal slices and top with a dollop of yogurt or whipped topping. Add additional toppings as desired.
