Ingredients

Melon and Feta Salad
8 oz Block
Feta Cheese (cubed)
2 Cups
Watermelon (cubed)
2 Cups
Cantlaoupe or Honeydew (cubed)
1 Cup
Cherry Tomatoes
2
Cucumbers (peeled and cubed)
Garnish:
Sprigs of Fresh Mint
Honey Vinaigrette
3 Tbsp
BeeMaid Honey
1/3 Cup
Olive Oil
2 Tbsp
White Wine Vinegar
2 Tbsp
Lemon or Lime Juice
1/4 Tsp
Salt and Pepper
1/2 Tsp
Garlic Powder

Directions

  1. In a mason jar, combine the BeeMaid Honey, olive oil, lemon juice, vinegar, garlic and salt and pepper together. Tighten the lid and shake well until the ingredients are fully mixed and the honey is dissolved.
  2. Cut the watermelon, cantaloupe, cucumber and feta into uniform, bite-sized cubes for a clean, checkerboard look.
  3. Arrange all  ingredients on a serving platter or cutting board in a repeating checkerboard pattern, or create your own colourful design however you like. Tuck the cherry tomatoes throughout the arrangement for extra colour.
  4. Drizzle with the prepared honey citrus dressing and garnish with fresh mint leaves just before serving. Enjoy!
