Ingredients
Directions
- Preheat oven to 400F. Prepare a large baking sheet with parchment paper and set a metal baking rack overtop (to catch any excess grease).
- Peel and chop the sweet potatoes into 1/2 inch cubes. Place the cubes on a large plate and microwave for 4 minutes, allowing the centers of the sweet potatoes to become slightly soft.
- Using thick wooden or metal skewers, place the sweet potato and folded pieces of bacon on the skewers, alternating them in a pattern. Be careful not to press the sweet potato and bacon pieces too tightly together to ensure they cook through on all sides. Repeat this step until there are about 8 pieces per skewer.
- In a bowl, combine the garlic powder, paprika, applewood seasoning, cayenne, nutmeg, cinnamon and sugar together. Then on a shallow plate, pour the spice mixture out in an even layer.
- Whisk the BeeMaid Honey and olive oil together in a separate small bowl and then brush the mixture overtop of each skewer, ensuring all sides have a light glaze.
- Slowly twirl each of the skewers overtop of the spice mixture to coat the edges of the bacon and sweet potatoes.
- Place the skewers on the metal baking rack in an even later and sprinkle the leftover spices all over of the skewers.
- Bake in oven for approx. 30-40 minutes or until the sweet potato is tender and the bacon is cooked and slightly crispy.
- Add an additional drizzle of BeeMaid Honey on top and enjoy!
(Note: If grilling skewers on BBQ, set heat to medium and grill skewers for approx. 15 minutes).
