1 Cup
Pineapple (crushed and drained)
1/2 Cup
Shredded Coconut
1/3 Cup
BeeMaid Honey
1/4 Cup
Coconut Oil
1/2 Cup
Cottage Cheese
2
Eggs
1 Tsp
Vanilla Extract
1 1/2 Cups
Whole Wheat Flour
1 Tsp
Baking Powder
1/2 Tsp
Baking Soda
1/4 Tsp
Sea Salt
Directions
- Preheat Oven to 350F and prep your muffin tin with liners.
- Using a blender or food processor, blend the cottage cheese until you have a creamy consistency (no lumps). In a mixing bowl, combine the cottage cheese, yogurt, BeeMaid Honey, vanilla and coconut oil until smooth.
- In a seperate bowl, whisk together the dry ingredients and add to the wet ingredients. Gently fold in the pineapple to the batter. Avoid overmixing.
- Add the batter to the prepped muffin tins, filling up the liners 3/4 of the way. Top with additional shredded coconut. Bake for 20-25 minutes until slightly golden on the outside.
- Allow the muffins to cool for 5 minutes and transfer to a baking rack. Enjoy fresh or store in the fridge for 3-4 days as a healthy morning meal prep.
