This Cherry Peach Quinoa Crumble is a healthy baked dish bursting with fresh summer flavours, naturally sweetened with juicy fruit and pure BeeMaid Honey. Tender cherries and ripe peaches are layered over a light quinoa crumble, creating a dessert that is both flavourful and wholesome. Peaches (chopped)
1 1/2 Cups
Cherries (pitted and chopped)
4 Tbsp
BeeMaid Honey
1 Tbsp + 1 Tsp
Coconut Oil (melted)
1/2 Tsp
Almond Extract
1/2 Cup
Red Quinoa (rinsed)
1/2 Cup
Almond Flour
1 Tsp
Cinnamon

Directions

1. Preheat oven to 375F.

2. In a small bowl, combine the 3 Tbsp of BeeMaid Honey, 1 Tbsp of the coconut oil, and the vanilla and almond extracts. Add the peaches and cherries to a larger bowl then pour the honey mixture on top, coating the fruit completely. Transfer the coated fruit into a lightly greased square baking dish.

3. In a seperate bowl, combine the quinoa, almond flour, cinnamon, 1 Tbsp of BeeMaid Honey and the remaining coconut oil with a fork, stirring until a crumb-like misture is formed.

4. Sprinkle the quinoa crumb mixture on top and bake for 30 minutes. Remove and let cool for 15 mins.

5. Serve as a dessert with a scoop of ice cream, or use as a fruity topping for yogurt parfaits or breakfast bowls.
