
We’re always looking for ways to elevate a grilled cheese, and a sweet and savoury combination is an easy way to change things up. This Blueberry Balsamic Grilled Cheese brings together creamy, melted cheese, fresh thyme and a homemade balsamic blueberry jam made with BeeMaid Honey. The blueberries and balsamic vinegar bring a tangy sweetness, while the honey adds a smooth, floral note that pairs beautifully with the richness of the cheese. It’s the kind of easy comfort food recipe that feels a little more special without requiring much extra effort. This gourmet grilled cheese is perfect for a quick lunch, cozy dinner or anytime you’re craving a fresh take on a classic.

- Prepare the blueberry jam. Add olive oil to a small saucepan and heat on medium high heat. Add the blueberries, lemon juice and the BeeMaid Honey. As the honey warms and melts, toss the blueberries with a spatula or wooden spoon until they are coated.
- Allow the blueberries honey mixture to simmer for approx. 7-10 minutes or until the blueberries are soft. Reduce heat to medium low and firmly press down on the blueberries until a thick, sticky jam consistency is formed.
- Add in the balsamic, salt, pepper and thyme and continue to stir for another 3 minutes, allowing the herbs and balsamic flavours to infuse with the jam.
- Remove from heat and set aside for approx. 15 minutes .
- Once the jam has had time to set and thicken, add a generous amount of butter to each side of the bread slices.
- Assemble the sandwiches. Add a layer of cream cheese to one side of the bread, followed by two spoonfuls of the blueberry balsamic jam on top. Spread it out evenly, then place two slices of the mozzarella cheese on top, followed by the remaining piece of buttered bread. (Optional: Add leafy greens like spinach or arugula for additional crunch).
- Heat up a large pan to medium heat and place the buttered side of the sandwich down.
- Grill each side for approx. 3-4 minutes until golden brown and crisp and the cheese inside has melted. (Pro Tip: to help the cheese melt, place a cover over the pan for a few minutes, allowing the steam to heat the sandwich).
- Remove from the heat and let rest for a few minutes before slicing. Enjoy!
