1. Add the peeled carrots to a food processor and pulse until shredded into tiny pieces.
2. Add in your dry ingredients and the protein powder to the food processor and blend on high speed for approximately 2-3 minutes until the nuts and oats have turned into a fine flour.
3. Add in your BeeMaid Honey, almond butter, pitted dates and vanilla extract. Blend once more on high speed until you've formed a thick, sticky dough-like substance.
4. Scoop out the dough with a spoon or ice cream scoop and then roll into a ball using your hands. In a small bowl, place the desiccated cocnut flakes and gently roll the balls in the coconut until lightly coated.
5. Place balls on a parchment paper and refrigerate for 15-30 minutes until firm. Store in the fridge for up to one week and enjoy.
