Mediterranean Honey Balsamic Chicken Bowl is a hearty, nutrient-packed meal layered with bold Mediterranean flavors and balanced textures. At its heart is a creamy honey balsamic dressing made with Greek yogurt, Bee Maid Raw Honey, balsamic vinegar, Dijon mustard, and garlic—bringing a tangy-sweet richness that ties the whole bowl together. Ingredients
Creamy Honey Balsamic Dressing
1/2 Cup
Plain Greek Yogurt

Bee Maid Raw Honey
2 Tbsp.
Organic Balsamic Vinegar
1 Tbsp.
Olive Oil
3/4 Tsp.
Dijon Mustard

Romain Lettuce (chopped)

Chickpeas
2 Cups
Rotisserie Chicken (cubed and skin removed)

Crispy Rice
3 Cup
Cooked Brown Rice
2 Tsp.
Olive Oil
2 Tsp.
Spicy Chili Crisp

Soy Sauce
1/4 Tsp.
Salt (to taste)
Directions
- In a medium bowl, add the Greek yogurt, olive oil, balsamic vinegar, garlic, dijon mustard and BeeMaid Raw Honey. Season with salt and pepper to taste then mix with a spoon to combine. Store in the fridge until ready to use.
- Cook your brown rice based on package directions. Add cooked rice, soy sauce, chili crisp and olive oil in a large bowl, season with salt and mix together. Spread the rice evenly onto a baking sheet and bake in the oven for 20 minutes at 400F or until rice turns crispy.
- In a large salad bowl, add the lettuce, chickpeas, chicken, tomato, avocado, pepper, feta, artichoke hearts, olives, nuts and crispy rice. When ready to serve, pour the salad dressing over top. Mix and enjoy!
