Directions

1. To a bowl add chopped chicken and season with salt and pepper. Add flour and gently mix to coat. Let the chicken sit for a few minutes to allow flour to stick. Add 2 tbsp sesame oil and mix to combine.

2. To a fry pan, heat 1 tbsp. sesame oil over medium-high heat. Add chicken and cook until golden and crispy, about 4-5 minutes per side. When done, remove from heat and set aside for later.

3. Prepare the honey orange ginger sauce by heating 2 tbsp. sesame oil. When hot, add ginger and garlic and stir fry to prevent burning. Next add soy sauce, brown sugar, liquid honey, orange juice, orange zest and red chili flakes. Mix to combine. Sauce is done once it begins to bubble and thicken. Remove from heat and add chicken to the pan, gently mixing to coat evenly.

4. Prepare vegetables by heating 1 tbsp. olive oil. Once hot, add onions and sauté until fragrant. Toss in the red pepper and snap peas and season with salt and black pepper to taste, about 5 minutes. Remove from heat and assemble bowls.

5. Divide chicken amongst 3 bowls and serve with veggies and a side of rice. Garnish with extra green onions if desired. Enjoy!

Pro Tip: Pre-chop your veggies and batch cook the rice beforehand to speed up the prep time!
