1.In the bowl of a stand mixer with the whisk attachment (or using a handheld electric whisk), beat the egg yolks and BeeMaid Honey together for 5–8 minutes, until the mixture is thick and fluffy.
2. In a separate bowl, stir together the mascarpone and sour cream until smooth, then carefully fold it into the honeyed egg yolks.
3. Pour the prepared Earl Grey tea into a shallow bowl. Briefly dip each biscuit into the tea — don’t let them soak — and arrange a layer at the bottom of a medium (8×8) baking dish or into individual serving glasses.
4. Spread an even layer of the honey cream mixture over the biscuits. Continue layering the biscuits and cream until all components are used.
5. Cover tightly with plastic wrap and refrigerate for at least 3 hours, or overnight.
6. Before serving, lightly dust the top with cinnamon for a warm finish.
