Honey Goat Cheese Zucchini Galette

Ingredients

  • Zucchinis (Sliced with Skin On)
  • 5 oz 
    Herbed Goat Cheese
  • 2 cups 
    Self Rising Flour
  • 1 cup 
    Greek Yogurt
  • 1/4 cup 
    Olive Oil
  • 2 Tbsp. 
    BeeMaid Honey
  • 1/2 Tbsp. 
    Red Chili Flakes
  • 1/2 tsp. 
    Salt and Pepper (To Taste)
  • 4-6 sprigs 
    Fresh Thyme

Directions

1. Preheat oven to 375 degrees. 

2. Spread a pinch of flour onto a flat surface. In a bowl, combine the flour and greek yogurt with a wooden spoon. Once combined, place the dough on the floured surfaced and knead the dough. Once you've reached a thicker consistency, form into a ball and roll out the dough flat like a small pizza.

3. Once rolled flat, place your dough onto a baking sheet lined with parchment paper and brush liberally with olive oil. 

4. Sprinkle some of the herbed goat cheesse around the dough and lighly spread with a knife or spoon to create a base layer, leaving approximately. Ensure that you leave approximatley 1 inch of the dough on the outer edge without any toppings (as you will fold this over later). Take your zucchini slices and begin to place them in a circular pattern starting from the outside and working inwards. 

5. Fold the edge of the dough over the zucchini and press down in place with your hands or a fork. Brush the zucchini and the crust with a bit more olive oil and season with the salt, pepper and red chili flakes. Finally, drizzle a bit of honey on top to help the zucchini caramelize.

6. Bake in the oven for 40 minutes until the crust is golden brown. Remove from the oven and top with fresh thyme sprigs and an additional drizzle of honey for serving.
