Honey Pecan Brittle

Ingredients

  • 1 cup 
    Tri-Colour Quinoa
  • 1 1/2 cups 
    Pecans (Finely Chopped)
  • 2 Tbsp. 
    Sesame Seeds
  • 1/2 cup 
    BeeMaid Honey
  • 1/2 tsp. 
    Salt
  • 2 Tbsp. 
    Butter
  • 3 Tbsp. 
    Brown Sugar
  • 1 Tbsp. 
    Coconut Oil
  • 2 Tbsp. 
    Vanilla Extract
  • 1 tsp. 
    Sea Salt (Optional Topping)

Directions

1. Preheat Oven to 325F.

2. Line a medium sized sheet pan with foil, wrapping it over the edges of the pan. Spray the foil with non-stick cooking spray, ensuring all corners are evenly coated.

3. In a small bowl combine the BeeMaid Honey, butter, brown sugar, coconut oil and vanilla and salt. Microwave ingredients for 1-2 minutes until the butter and coconut oil are melted. Whisk until all ingredients are mixed together evently and the brown sugar has fully disolved. 

4. Pour the quinoa, chopped pecans and sesame seeds into the mixture with a spatula, ensuring they are fully coated.

5. Spread the mixture over the foil in an even layer. Bake in the oven for 15 minutes or until the brittle has changed to a deep golden colour. 

6. Once removed from the oven, sprinkle lightly with sea salt and let cool completely. Using the spatula, lift the edges of the brittle up from the foil. 

7. Using your hands, break the honey pecan brittle into small pieces and store in an air tight container for snacking. Tip: to avoid brittle sticking together in the container, place wax paper in between layers.
