1. Preheat your oven to 400F. On a flat surface, roll out the puff pastry dough with a rolling pin into an 11x11 inch square (ensuring it is large enough to wrap around the full wheel of brie cheese).
2. Once rolled out, place the brie wheel in the centre of the dough and top with 2 Tbsp of honey. Scatter the dried cranberries on top. Fold the corners of the puff pastry dough over the brie one at a time.
3. Brush the corners with an egg wash as you go, using it to help the pieces adhere to one another. Once all the pieces have been folded over and the brie is wrapped, brush with an egg wash all over the outer edge.
4. Place the wrapped brie in the oven and let bake for 10 minutes. Remove from the oven. Top with the remaining 2 Tbsp of BeeMaid Honey and top with the sliced almonds. Bake for an additional 10 minutes until the pastry is flakey and golden.
5. Remove and let rest for 5-10 minutes. Add to a serving tray with crackers and top with an additional drizzle of BeeMaid if desired.
