|1/4 cup||Pomegranate juice|
|2 tbsp||Bee Maid Honey, divided|
|1/4 tsp||Ground coriander|
|1/8 tsp||Cayenne pepper|
|2 cloves||Garlic, smashed|
|4 Boneless,||Skinless chicken breasts|
|Pistaschio nuts,||Chopped and rosted, for garnish|
1. Mix pomegranate juice, 1 ½ Tablespoons honey and next 5 ingredients; pour over chicken.
2. Marinate overnight or at least 8 hours, refrigerated, turning occasionally.
3. Drain chicken, reserving marinade. Simmer marinade, covered for 10 minutes, reserve.
Bake at 450°F, brushing frequently with reserved marinade, until meat is just firm to the touch, about 20 minutes. Brush with 1/2 teaspoon reserved honey. Garnish with pomegranate seeds and chopped pistachios.
