Pomegranate Chicken

1/4 cup Pomegranate juice
2 tbsp Bee Maid Honey, divided
1/4 tsp Ground coriander
1/4 tsp Cinnamon
1/4 tsp Allspice
1/8 tsp Cayenne pepper
2 cloves Garlic, smashed
4 Boneless, Skinless chicken breasts
Salt, as Needed
Pepper, as Needed
Pomegranate, for Garnish
Pistaschio nuts, Chopped and rosted, for garnish


1. Mix pomegranate juice, 1 ½ Tablespoons honey and next 5 ingredients; pour over chicken.
2. Marinate overnight or at least 8 hours, refrigerated, turning occasionally.
3. Drain chicken, reserving marinade. Simmer marinade, covered for 10 minutes, reserve.
Bake at 450°F, brushing frequently with reserved marinade, until meat is just firm to the touch, about 20 minutes. Brush with 1/2 teaspoon reserved honey. Garnish with pomegranate seeds and chopped pistachios.
