Honey Almond Chews

Ingredients
| 1 tablespoon | Candied ginger (optional) |
| 2 cups | Sliced almonds or chopped walnuts |
| 1 cup | Bee Maid Liquid Honey |
| ½ cup | Sugar |
Directions
Preheat oven at 350 F. Lightly grease an 8-by-8 inch baking pan. Set aside. If using candied ginger, grin in blender or food processor until finely minced. Spread sliced almonds or chopped walnuts on a baking sheet and toast in the oven for 8 to 10 minutes, or until the nuts are pale golden and give off a toasty aroma. In a heavy-bottomed pan over medium heat, combine honey and sugar. Heat, stirring, until sugar dissolves, 8 to 10 minutes.Add nuts and ginger, if using and continue cooking, stirring frequently, until mixture turns a deep golden color and registers 280 F on a candy thermometer. Pour carefully into oiled pan, spreading in a thin (½ inch) layer. Score into small squares with a sharp knife. When cool, break into squares and store in airtight containers.
