Chipotle 'Bee-Mine' Cashew Chicken

6-8 Boneless Chicken Breast halves - remove skin
1/3 cup Vegetable Oil
2 tbs Butter
1/2 cup BeeMaid Honey
2 tbs Lime Juice
1 tsp Chipotle Pepper Flakes
Black Pepper
pinch Sea Salt
1/3 cup Salted Cashews
1 tbs Black Sesame Seeds
1/3 cup BeeMaid Honey
pinch Sea Salt
quarter Freshly Squeeze Lime
chopped Fresh Cilantro


Preheat oven to 400 F
Lightly coat glass rectangle baking dish with cooking spray.
Mix ingredients (except chicken & topping) in bowl, in microwave, until honey is melted.
Put chicken breast-side-up in the baking dish and baste with honey mixture.
Bake uncovered about 30 minutes; basting liberally 3-4 times without turning chicken.
While Chicken is baking, heat skillet to medium high and toss cashews toasting (but avoid burning).  Add honey and sprinkle with sea salt, turn cashews quickly to coat with honey.  Sprinkle with sesame seeds, toss to coat evenly.  Remove from heat and place honeyed cashews over chicken breasts. 

Place back in oven for 10 minutes.  Remove and seal with tin foil.  Let sit, covered, out of oven, for 5 minutes before serving.  Drizzle with freshly squeezed lime juice and fresh cilantro just before serving.

Enjoy with warm french bread, green salad and chilled white wine.
